【摘要】:Theenergyinputratetestisusedtoconfirmthatthefryerundertestisoperatinginaccordancewithitsnameplaterating.Fryertemperaturecalibrationisusedtoensurethatthefryerbeingtestedisoperatingatthespecifiedtemperature.Temperaturecalibrationalsocanbeusedtoevaluateandcalibratethethermostatcontroldial.Preheatenergyandtimecanbeusedbyfoodserviceoperatorstomanagetheirrestaurants''energydemands,andtoestimatetheamountoftimerequiredforpreheatingafryer.Idleenergyrateandpilotenergyratecanbeusedtoestimateenergyconsumptionduringnon-cookingperiods.Preheatenergy,idleenergyrate,pilotenergyrate,andheavy-andlight-loadcookingenergyratescanbeusedtoestimatethefryer''senergyconsumptioninanactualfoodserviceoperation.Cooking-energyefficiencyisadirectmeasurementoffryerefficiencyatdifferentloadingscenarios.Thisinformationcanbeusedbyfoodserviceoperatorsintheselectionoffryers,aswellasforthemanagementofarestaurant''senergydemands.Productioncapacityisusedbyfoodserviceoperatorstochooseafryerthatmatchestheirfoodoutputrequirements.1.1Thistestmethodcoverstheenergyconsumptionandcookingperformanceoflarge-vatopen,deepfatfryers.Thefoodserviceoperatorcanusethisevaluationtoselectafryerandunderstanditsenergyefficiencyandproductioncapacity.1.2Thistestmethodisapplicabletofloormodelgasandelectricfryerswith50lb(23kg)andgreaterfatcapacityandan18-in.andlargervatsize.1.3Thefryercanbeevaluatedwithrespecttothefollowing(whereapplicable):1.3.1Energyinputrate(10.2),1.3.2Preheatenergyandtime(10.4),1.3.3Idleenergyrate(10.5),1.3.4Pilotenergyrate(10.6,ifapplicable),1.3.5Frenchfrycookingenergyrateandefficiency(10.9),1.3.6Frenchfryproductioncapacityandfryingmediumtemperaturerecoverytime(10.9),1.4Thistestmethodisnotintendedtoanswerallperformancecriteriaintheevaluationandselectionofafryer,suchasthesignificanceofahighenergyinputdesignonmaintenanceoftemperaturewithinthecookingzoneofthefryer.1.5Thevaluesstatedininch-poundunitsaretoberegardedasstandard.ThevaluesgiveninparenthesesaremathematicalconversionstoSIunitsthatareprovidedforinformationonlyandarenotconsideredstandard.1.6Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
